Balaleet Recipe – Learn How to Cook It

Balaleet is a traditional and popular Emirati dish usually served as a breakfast meal. In all Middle Eastern countries, it has a similar version of taste with various names. This Indian-influenced pasta contains both salty and sweet elements. It is fried and topped with a saffron omelet that makes it more crunchy, tender and savory. You can also enjoy Balaleet at festivals, such as Eids and wedding as a scrumptious dessert.

A bite of crispy, sweet and salty egg noodles gives you a unique and divine taste. Along with its salty-sweet taste, you can also delight your taste buds with cardamom and cinnamon spices.

  • Dry rice noodles (Vermicelli) —- 500 grams
  • Onion — 1 small
  • Clarified butter (Ghee) — 5 tablespoons
  • Caster Sugar — ½ cup
  • Cardamom, ground — 1 teaspoon
  • Cinnamon, ground — 1 teaspoon
  • Saffron — 1 teaspoon
  • Orange blossom water (or rose water) —- 1 teaspoon
  • Egg, beaten — 3
  • Salt and Black pepper — as per taste
  • Water for boiling the noodles
  • Pistachios for garnish

Serves: 4-6 Persons

Preparation Time: 45 Minutes


  1. Boil water in a large pot, add noodles and 1 tablespoon of ghee into the boiling water.
  2. When the noodles are half-cooked, drain and pour it into a bowl.
  3. In a frying pan, fry onion in 2 tablespoons of butter/ghee, add eggs and stir well.
  4. Add the sugar, orange blossom and noodles and mix all these things and stir well.
  5. Sprinkle the cardamom, cinnamon and saffron into the noodles, and also add salt and black pepper to

  • Traditionally it is served along with boiled garbanzo beans and boiled black-eyed peas. Instead of mixing the eggs with the noodles, you can use fried eggs or a thin omelet on top of the noodles.
  • Serve it in a large serving dish and garnish it with pistachios. Enjoy this super delicious meal!!
