Mahalabiya Recipe- Enjoy This Arabic-Style Milk Pudding

Mahalabiya- a traditional Middle Eastern custard that is made with boiled milk and sugar, thickened with cornstarch, and then laced with thick cream and rose water. This yummy sweet dish is often eaten during Ramadan after Iftar in various Arabic countries. It is so creamy, tasty and mouth-watering. I really love it!!!

Ingredients:  

  • Milk —- 2 cups

  • White sugar —- ½ cup or to taste
  • Heavy cream —- 1/2 cup
  • Rose water —- 1 tablespoon
  • Cornstarch —- 4 tablespoons
  • Cardamom pods minced —- 2
  • Vanilla —- 1 teaspoon
  • Pistachio for garnish

Servings: 4-5

Preparation Time: Approximately 2 hours 20 minutes

Directions:

  1. Combine milk and sugar in a saucepan and boil them over a medium heat.
  2. Mix ¼ cup of hot milk with the cornstarch in a separate bowl and dissolve the cornstarch.
  3. Then pour it into the boiling milk and cook it over medium heat until thickened, for almost 15-20 minutes. Keep stirring slowly as well.
  4. When the mixture thickens like cake batter, remove the pan from heat and add cream, rose water and cardamom into the mixture and stir properly.
  5. Let it cool for 2-3 hours. Serve it in small plates and garnish it with pistachios.

Note:

  • Use skim milk instead of simple milk if you like.
  • In some Arabic regions, people also use rice with it; you can add 1 cup of rice in 2 cups of milk after boiling to mix it.
  • You can garnish it with your favorite nuts instead of pistachios.
  • You can also serve it with fruits, like mangoes and bananas to make a variation. Enjoy Chilled and Delectable Mahalabiya!!
