How to make Emirati Style Stuffed Capsicums?

Capsicum is one of the most popular chili family members that people mostly use as a vegetable. It is a rich source of plant nutrients that offer several health benefits. In every country, people make this healthiest veggie in their own culinary style. So, you can easily find some variations to make the capsicums. Here, I’m going to share a simple recipe for stuffed capsicums in Emirati style. I hope you like it.

Emirati style capsicums are made with healthy Arabic spices and tomato sauce that give a heavenly taste to them. You can serve these amazing and mouth-watering Stuffed Capsicums as a side dish at lunch or dinner. It will surely add an exciting crisp to your food creations!

Ingredients

  • Red capsicums (Bell peppers) —- 10

For Stuffing:

  • Long-grain white rice —- 1½ cups (300 g)
  • Beef (ground) —- 500 g, minced
  • Onion —- 1, finely chopped
  • Garlic —- 2 cloves, crushed
  • Flat-leaf parsley —- ½ cup, finely chopped
  • Coriander —- ½ cup, finely chopped
  • Zucchini —- 2, finely chopped
  • Ground cinnamon —- ¼ teaspoon
  • Freshly ground black pepper —- ½ teaspoon
  • Salt —- 1 tablespoon
  • Greek yogurt —- ½ cup
  • Pine nuts —- ¼ cup
  • Extra virgin Olive oil —- 1 tablespoon

For Tomato sauce:

  • Can chop tomatoes — 800 g
  • Tomato paste —- 1½ tablespoons
  • Lemon juice —- 2 tablespoons
  • Salt —- 1 teaspoon
  • Boiling water —- 3 cups

Servings: 10

Preparation Time: 25 Minutes

Directions:

  1. Preheat oven to 160/180°C. Trim the top from each capsicum and remove the seeds and membranes.
  2. In a large bowl, add the rinsed rice and fill it with water. Boil the rice for almost 10 minutes over medium heat. When the rice is boiled, remove the heat, separate the rice from water and keep aside.
  3. Heat one tablespoon oil in a frying pan over medium-high heat. Add onion and cook until softened and browned. Add garlic and yogurt and stir until fragrant.
  4. Add beef and stir well. Cook until meat is tender.
  5. Season all the remaining ingredients and cook properly.
  6. To make tomato sauce, place chopped tomatoes and paste into a pan and add water to it and bring to boil. Add salt and lemon juice and cook until it becomes a thick sauce.
  7. Place all the stuffing mixture and boiled rice in a large bowl and combine with your hands.
  8. Stuff each capsicum with the stuffing mixture and pour the sauce over the capsicums.
  9. Drizzle some oil on them and keep them in preheated oven for almost 25 minutes or until capsicums are tender.
  10. When they are cooked completely, serve them on a serving platter with fresh parsley leaves. Enjoy these Fabulous and Delicious Stuffed Capsicums!!!
