Middle Eastern Chicken Rice Recipe is Here

Do you want to learn how to make Middle Eastern chicken rice with black beans and chickpeas? Well, you’re at the right place. The possibilities of add-ins are countless, for example, you can use ground beef, lamb or fish instead of turkey meat. Here, I’m going to share a simple and quick Middle Eastern rice recipe.This rice dish has great flavor, and it is full of nutrients as it is made from chickpeas and black beans, topped with turkey meat and chicken breast. This sizzling dish is usually served as a side dish or as a main dish, filling in a burrito.

Ingredients

  • Basmati rice —– 1 cup
  • Garbanzo beans (chickpeas) —– 2 cans, drained & rinsed

  • Black beans —– 2 cans, drained &rinsed
  • Chicken stock —– 1 quart
  • Ground turkey —– 1 1/2 pounds
  • Olive oil —– 1 tablespoon
  • Garlic —– 1 clove, minced
  • Ground cumin —– 2 teaspoons
  • Ground coriander —– 2 teaspoons
  • Ground turmeric —– 1 teaspoon
  • Ground cayenne pepper —– 1 teaspoon
  • Salt & ground black pepper to taste
  • Fresh cilantro —– 1 bunch, chopped (optional)
  • Fresh parsley —– 1 bunch, chopped (optional)
  • Pine nuts —– 1/4 cup (optional)

Servings: 8

Preparation Time: 1 hour

Directions:

  1. In a large saucepan, heat the oil over medium heat. Add garlic and cook for 1 minute.
  2. Add rice, turmeric, cumin, cayenne and coriander and simmer for 5 minutes.
  3. Then add chicken stock and bring to boil over low heat. Cover and simmer for 20 minutes.
  4. Take a skillet and place the turkey over medium heat. Cook until the stock is evenly browned.
  5. Add garbanzo beans, black beans, parsley, cilantro, and pine nuts and simmer until they are tender.
  6. Then gently place this mixture into the cooked rice. Season with salt and pepper.
  7. Serve this delicious Middle Eastern rice dish on a large serving platter. Enjoy!!
