Grape Leaves Aleppo Recipe – Learn How to Cook it

‘Yum’ is the perfect word to describe Grape Leaves Aleppo. It’s so delicious, tantalizing and flavorful!! There are several variations available for cooking these tasty leaf-rolls. But here, I’ve rounded up my favorite grape leaves Aleppo recipe. The grape leaves are stuffed with a mouth-watering mixture of lamb meat, rice, allspice and lemon juice. This dish requires more time for preparation, but it is easy and simple to make. So you don’t have to put some extra effort to make these leaf-rolls. This is usually called “Dolma” in the Middle Eastern countries where people love to eat these leaf-rolls as a main dish or an appetizer, depending on their craving.

How to Make This Grape Leaves Aleppo Recipe?

Ingredients

  • White rice —— 1 cup
  • Ground lamb —– 2 pounds 7e8adfb7ba409e2dc303c1894ef2ed9a
  • Grape leaves —– 2 (16 ounces) jars, drained and rinsed
  • Salt —– 1 teaspoon
  • Ground black pepper —– 1 teaspoon
  • Ground allspice —- 1 tablespoon
  • Onion —– 1 large, chopped
  • Garlic —– 6 cloves, sliced
  • Lemon juice —– 1 cup
  • kalamata olives —- 2 (optional)
  • Olive Oil —– 1 cup
  • Water as needed

Servings: 32

Preparation Time: Approximately 2 hours

Directions:

  1. Soak rice in cold water, and drain.
  2. Mix the ground lamb, rice, salt & pepper and allspice in a large bowl until well blended.
  3. Heat olive oil in a skillet over medium heat and sauté onions and garlic until they are tender and softened. Then place the lamb mixture and simmer for 10-15 minutes, until rice and meat are almost cooked. Add lemon juice to this mixture, stir and remove from the heat.
  4. Take one grape leaf and place one tablespoon of the mixture into the center of the leaf. Fold both sides of the leaf towards the center, roll up the leaf from the bottom to the top and then closed it. Repeat this with all grape leaves.
  5. Fill a large pot with water and heat this pot on medium-high heat. Place the leaf-rolls in the pot, covering with water. Add more water to cover the rolls if needed.
  6. Sprinkle with some lemon juice. Add the olives to the pot for seasoning, if desired.
  7. Bring to a boil, low the heat, cover the pot and simmer for about 1 hour.
  8. When they are cooked, remove from the heat. Transfer leaf-rolls to a serving platter and let cool for almost half hour.
  9. Serve this delicious grape leaves Aleppo with hot sauce and enjoy this sizzling dish.
