Pasta Primavera with Smoked Gouda Cheese Recipe

Pasta Primavera– This is just awesome. This pasta primavera with Gouda cheese recipe is an amazing and wholesome combination of fresh vegetables, herbs, and the smoked cheese. Instead of these veggies, you can use vegetables of your choice to give a new flavor to this Indian Pasta.

You can enjoy this yummiest and lip-smacking pasta at any time, either at lunch or dinner. It’s crunchy, creamy and savory just because of its several tantalizing ingredients. Have a look at the ingredients and cooking instruction to learn how to cook this scrumptious pasta.

Ingredients:

  • Whole wheat penne pasta —— 1 Package (16 ounces)

  • Stewed Tomatoes —- 1 Can (14.5 ounces), chopped
  • Mushrooms —- 1 package (8 ounces), sliced
  • Shredded smoked Gouda cheese —– 2/3 cup
  • Low-sodium chicken broth —- 1 Cup
  • Olive oil —– 2 tablespoons
  • Zucchinis —– 2, diced
  • Green Bell Pepper —- 1, diced
  • Carrots —- 2, diced
  • Onions —- 3, diced
  • Garlic cloves —– 3, minced
  • Fresh parsley —- 2 tablespoons, chopped
  • Basil —— ½ teaspoon, dried
  • Oregano —– ½ teaspoon, dried
  • Red Pepper Flakes —- ½ teaspoon
  • Grated Parmesan Cheese —- 2 tablespoons

Servings: 8

Preparation Time: 50 minutes

Directions:

  1. Fill a large saucepan with salted water and add penne pasta. Bring to a boil and cook it according to the instruction mentioned on the package.
  2. Heat olive oil in a frying pan over medium heat. Add onions, bell peppers, carrots, mushrooms and zucchini and sauté for almost 5 minutes, until they become softened and translucent.
  3. Add garlic and simmer for one minute more.
  4. Place chicken broth, tomatoes, basil, parsley, red pepper flakes and oregano into the vegetable mixture. Stir well and bring to a boil. Then, low the heat and cook until the sauce thickens.
  5. Add cooked pasta and simmer for almost 2 minutes, until heated it is tender.
  6. Pour this delicious pasta on a serving platter and top it with Parmesan and Gouda cheese.
