The scrumptious phyllo spinach tartlets are made from festive spinach and sun-dried tomatoes mixed with ricotta and feta cheese. To make them tastier and more appealing, the mouth-watering mixture is filled in the phyllo sheets. These tartlets are full of nutritional value and taste divine and mind-blowing.

Ingredients:

  • Spinach —- 1 pound (10 cups), stems removed & chopped
  • Sun-dried tomatoes —– 1/2 cup, finely chopped
  • Yellow onion —- 1 medium, chopped spinach-cheese-filo-pies-18580_l
  • Garlic clove —– 1, minced
  • Low-fat ricotta cheese —- 1 cup
  • Crumbled feta/goat cheese —– 1/3 cup
  • Extra-virgin Olive oil —– 2 tablespoons
  • Unsalted butter —- 4 tablespoons
  • All-purpose flour —- 2 tablespoons
  • Eggs —- 2 large size
  • Egg whites —– 2 large size
  • Milk —- ¼ cup
  • Salt —- 1 1/4 teaspoons
  • Ground nutmeg —– 1/4 teaspoon
  • Ground pepper —– 1/2 teaspoon
  • White wine vinegar —- 1 tablespoon
  • Phyllo (fillo) dough —- 60 sheets (9-by-14-inch), thawed according to package instructions

Makes: 24 Tartlets

Preparation time: 1 hour 40 Minutes

Directions:

  1. Preheat the oven to 325°F.
  2. Melt 2 tablespoon butter in a frying pan over medium heat. Add onion and cook until brown and tender. Add garlic and salt and simmer about 3 minutes. (Stirring occasionally).
  3. Add spinach and cook for 2 to 3 minutes until wilted.
  4. In a large bowl, mix ricotta, feta, milk, flour, eggs, egg whites, black pepper, white wine vinegar, and nutmeg together.
  5. Pour them into the spinach mixture and stir properly and cook.
  6. Add sun-dried tomatoes and cook until the mixture is tender and offer fragrant.
  7. Melt the remaining 2 tablespoons butter with olive oil in a small saucepan and remove from the heat.
  8. Unroll phyllo sheets and keep them onto a dry and clean surface or a serving dish. Use 24 tart pans of 11-inch each for this recipe instead of making them individuals. Cut the sheet in half crosswise and cover the phyllo sheets with a plastic wrap or damp towel to prevent drying out.
  9. Lightly coat the butter mixture on each tartlet pan, and place 1 half sheet of phyllo in each pan. Press them into the edges to give a proper shape and lightly coat with butter mixture. Make a layer of 5 sheets on each pan and continue to brush them with the butter mixture.
  10. In a baking sheet, place all the tartlet pans and fill them with the spinach mixture. Fold the dough over the filling (don’t cover them completely) and brush the edges of the dough with the remaining butter mixture.
  11. Keep the tartlets in a preheated oven and bake them about 35 minutes, until the filling is set and crust is golden brown.
  12. When the tartlets are tender, let them cool for almost 5 minutes and gently turn the tartlets out of the pans. Serve these delicious tartlets with your favorite sauce and fresh salad.
