Check out this Stuffed Zucchini Recipe

Zucchini is a popular summer squash that people love to eat in Middle Eastern countries. This green vegetable is full of nutrients and minerals. There are lots of ways to cook zucchini but here I’m going to share my favourite recipe – Stuffed zucchini recipe. It is packed full of meat, spaghetti sauce, and cheese which make this dish more delicious and tantalizing.

Ingredients

  • Ground beef —— 1/2 pound
  • Zucchini —– 4 large, ends trimmed
  • Breadcrumbs —– 1/2 cup
  • Onion —– 1 medium, chopped
  • Garlic —- 2 cloves, minced
  • Salt and pepper to taste
  • Sliced black olives —– 1/2 (6 ounces) can, drained
  • Spaghetti sauce —— 1 (16 ounces) jar
  • Grated Parmesan cheese —– 1/2 cup
  • Shredded mozzarella cheese —— 1 cup

Servings: 4

Preparation Time: About 1 hour 10 minutes

Directions:

  1. Preheat the oven to 350 F° or 175 C°.
  2. Cut each zucchini in half the long way. Use a spoon and scoop out the flesh from the slices of zucchini, leaving a thick shell all around the zucchini halves. Chop the scooped-out zucchini flesh and keep aside.
  3. Heat the oil in a skillet over medium heat and place ground beef into the oil. Cook and stir the ground beef until it is browned and tender. Remove the excess fat and transfer the cooked beef to a mixing bowl.
  4. Add chopped zucchini flesh, spaghetti sauce, breadcrumb, olives, Parmesan cheese and salt and pepper. Mix all these ingredients and use it for stuffing.
  5. Stuff the zucchini halves with the meat mixture. Place them into a baking dish, and cover with a lid.
  6. Bake the zucchini halves in the preheated oven for 45 minutes. Then, remove them from oven.
  7. Garnish each zucchini half with the shredded mozzarella cheese.
  8. Now the stuffed zucchini is ready. Place them on a serving plate and serve zucchini halves with tomato sauce.
